JOB PURPOSE
Here at National Trust for Scotland’s beautiful Culzean Castle we are looking for energetic, cheerful, and hard-working individuals to join our amazing Food and Beverage team.
Previous experience would be advantageous, but is not essential, as full training will be provided.
We would love to hear from people who can interact with our guests and make them feel welcomed and valued from the minute they arrive until we wish them farewell. This role is vital in providing our guests with the best possible service in whichever food outlet they have chosen to visit and helping our visitors to create wonderful memories.
The role is varied and covers everything for taking orders to serving food and drinks to our customers, being the best barista or a hot-shot ice-cream scooper, but whatever you are doing you’ll help us maximise all charity income opportunities through excellent customer service, product knowledge, following best working procedures and taking pride in everything we do.
Core hours will be the minimum hours available, with the opportunity to work additional hours to suit the needs of the business. Must have full flexibility and weekend availability, hours will be issued on a weekly rota basis.

KEY RESPONSIBILITIES AND ACCOUNTABILITIES
To provide a consistently high standard of visitor care at all times
• Line management of Visitor Services Assistants and volunteers.
• Duty management and oversight/maintenance of the property
• Welcoming all visitors to the site and processing their Food & Beverage purchase in a friendly, efficient and professional manner.
• Assist all visitors with queries relating to Food & Beverage purchases or experience
• Promoting National Trust for Scotland brand to include our Membership scheme, events, upselling other properties and any promotional campaigns, being proactive in the selling of Membership and Gift Aid.

To maintain excellent standards of site and personal presentation at all times
• Supervise the activities of a team of permanent and seasonal Visitor Service Assistants (VSAs), achieving excellent staff performance and motivation through effective induction, training, task-setting and coaching on front and back-of-house routines.
• Wearing correct uniform, name badges, or PPE as required.
• Ensuring site is ready to open and welcome visitors by the set opening time.
• The general ongoing operational cleaning of all areas as necessary; toilet cleaning, emptying waste bins and as appropriate vacuum cleaning, mopping, sweeping, dusting and polishing when required.
• Reporting all instances of damage and wear and tear issues promptly to your line manager.
• Working in harmony with other departments; housekeeping, gardening, grounds maintenance and site repair employees/contractors.

JOB PURPOSE

We are looking for enthusiastic, motivated and talented customer focused individuals to join our team at Crathes Castle.

Crathes Castle is a fabulous place for tourists and locals to soak up the atmosphere of old Scotland. Staff should be passionate about delivering outstanding customer experiences to our visitors and guests and able to maximise opportunities to generate income. KEY RESPONSIBILITIES AND ACCOUNTABILITIES

Financial Responsibilities

• To adhere to all financial procedures to include till operations and cash reconciliation duties.

• Upsell products within the café.
• Actively feedback visitor comments to line managers to improve offer, service and operation.

Health and Safety
• To ensure the site meets with the Health and Safety legislation in liaison with your department manager.
• To ensure that visitors vacate the site at close of business and site is secured at end of the day.

KEY PURPOSE

The purpose of the role is to support the conservation of Brodie Castle & Estate by generating income through the catering operations whilst delivering the highest standard of visitor experience for all visitors and guests. This will be achieved by maintaining the highest standards of conservation and adhering to regional and national strategies, policies, and procedures.

KEY RESPONSIBILITIES

Visitor Catering Experience
• Overall responsibility for the management and delivery of the catering facilities at Brodie Castle & Estate. This includes, but is not limited to, the Castle Café, Playful Garden Pavilion and 2 mobile catering units
• Ensuring innovative ideas, current trends and a quality offer in catering are constantly being delivered in all outlets on site
• Setting objectives and being responsible for the overall, day-to-day running of the catering operations
• Leading and managing a team of staff; managing performance, recognising training needs and potential as appropriate
• Managing budgets – ensuring that, as a minimum, the financial targets agreed with, in line with the budget are met
• Devising, costing and sourcing menu items and consistently looking at ways of maximising income through effective purchasing and creative merchandising
• Adhering to the sale of alcohol legislation, being a Premises Manager
• Regularly monitoring customer feedback, Mystery Visitor and Visit Scotland Audits and develop suitable action plans based on the results
• Being visitor/customer focused by being visible, approachable, and quick to exceed expectations in fulfilling customer needs

Health & Safety, Food Safety, the Environment
• Ensuring that the operation meets statutory requirements of Health and Safety, Food Safety and Environmental legislations and procedures
• Conducting Food Safety and Health and Safety Risk Assessments and ensuring that all standards and procedures with regards to Hygiene and Safety are established and followed
• Recording and reporting all accidents within the location, adhering to location and company procedures
• Ensuring all equipment is well maintained and is in good working order
• Making recommendations for renewal and replacement of equipment when required
• Establishing and maintaining location cleaning schedules
• Ensuring that all Trust procedures and work instructions are fully understood and practiced by all employees
• Promoting and encouraging environmental improvement initiatives as appropriate within the business

Our Visitor Experience team members are the first point of contact for visitors. We welcome hundreds of people each week to our Centre and this role ensures that the variety, quality and sustainability of food products provided through our Seabird Café contributes to the customer’s overall experience.

Principal responsibilities
We are looking for an enthusiastic person who is motivated to provide an excellent offer in our café, leads by example on customer care and professionally handles customer compliments and complaints. The individual will be a team player and, as part of our visitor experience management structure, will need to undertake the tasks of the designated Centre Duty Manager on a rota basis.

i. Provide a warm and friendly welcome to our customers ensuring that they have a
good customer experience and that our approach is inclusive towards everyone.
ii. Support the Catering Manager in running the Seabird Café and kitchen to deliver a
varied menu that meets our sustainability (local, sustainable sources) and quality
(taste, presentation, value) of products we serve in the café.
iii. Undertake specific duties assigned by the Catering Manager including rota
preparation, stock ordering and receipt, checking equipment is operational and daily
cash/payment reconciliation.
iv. Work safely, observing all Health & Safety policies and procedures and the hygiene
standards required from our catering system.
v. Supervise café and kitchen staff ensuring that they understand their duties and are
supported to carry these out effectively day to day. Support recruitment and training
needs.
vi. Assist with the preparation of food in the kitchen, when required.
vii. Ensure all caterings areas are checked and are fully operational, cleaned and meet
required hygiene standards.
viii. Undertake the activities required of our Centre Duty Manager on a rota basis which
includes opening up/closing down the Centre, daily safety checks and ensuring the
visitor experience team is deployed across teams to meet the customer demands
across the day.
ix. Efficiently handle customer compliments and complaints.
x. Be willing to learn about our wider charitable activities and talk to customers about
these, including promoting the benefits of our visiting our paid experience and
membership.
xi. Carry out any other reasonable duty which is within the competence of the post,
when directed by the Catering or Duty Manager to assist.

We are looking for a Cook to join our Catering team. We welcome hundreds of people each week to our Centre and this role ensures that the variety, quality, and sustainability of food products provided through our Seabird Café contributes to the customer’s overall experience.

The Cook supports the preparation of the food on the menu for our daily service and occasional events.

The main responsibilities of the Cook are:

i. Check the quality of ingredients and prepare these to use in cooking (chopping and
peeling vegetables, cutting meat, preparing salads etc.).
ii. Learn and become familiar with the cooking process, equipment and appliances used
to make each of our dishes.
iii. Ensure great presentation of our food, by dressing dishes before they are served.
iv. Cook dishes under the supervision of the Catering Manager or the Chef and develop
sufficient competence to provide cover during staff absences/holiday cover.
v. Ensure that all dishes for a single order are ready for serving at the same time and
co-ordinate effectively with the café serving team.
vi. Take responsibility for maintaining and cleaning the kitchen area/equipment
ensuring that all appropriate standards are met.
vii. Ensure all food and other items are stored properly.
viii. Monitor stock levels and advise the Catering Manager or Chef of any orders that need to be placed.
ix. Ensure that all duties are undertaken in compliance with health and safety, food
standards and hygiene regulations and practices, as well as our internal procedures.
x. Carry out any other reasonable duty which is within the competence of the post.

Newbattle Abbey College has an exciting opportunity for the right person with an interest in furthering or developing their career in catering supervision.

The post holder will be responsible for the supervision and delivery of catering services across College-wide activities. This is a full-time permanent position.

Major Tasks/Job Activities
1. Assist the Catering Manager in the provision of the catering services and to
deputise in his/her absence.
2. Supervise Catering Assistants and establish effective working relationships.
3. Responsible for the preparation, cooking and serving of food, including catering
for dietary requirements for a wide range of clients.
4. Prepare and cook food according to recipes.
5. Contribute to menu planning.
6. Operate and oversee the use of catering equipment.
7. Ensure that the kitchen and dining areas are maintained to a high level of hygiene.
8. Undertake periodic cleaning tasks e.g., defrosting a fridge, as directed by the
Catering Manager.
9. Keep clean and orderly storerooms, fridges and freezers etc.
10.Clean stoves and general work areas.
11.Handle small amounts of cash as directed by the Catering Manager.
12.Complete monthly stocktake.
13.Record keeping of stock, waste management etc.
14.Comply with policies and procedures and statutory hygiene regulations.
15.Compile Health and Hygiene control sheet.
16. Promote and maintain high quality customer service.
17. Attend meetings when required, and/or in the absence of the Catering Manager.
18. Undertake any other such duties as may be required as appropriate to the scope
and grading of the post.
