We are looking for energetic, cheerful, and talkative individuals to join our amazing Food and Beverage team here at The Courtyard Café.

No previous experience is needed, as full training will be provided, we would just love to hear from people who can interact and chat with our guests and make them feel welcomed and valued from the minute they arrive until we wish them farewell.

This role is vital in providing our guests with the best possible service during their visit to Haddo House, whether that’s in our café or at one of our pop up stalls at our events.

The role is varied and you may be creating the best barista coffee, making up a sandwich, hot food or serving a refreshing ice cream but whatever you are doing you’ll help us maximise all charity income opportunities through excellent customer service, product knowledge and taking pride in everything we do.

KEY RESPONSIBILITIES AND ACCOUNTABILITIES

• To provide a consistently high standard of visitor care at all times when:
• Welcoming all visitors to the site and processing their catering purchase in a friendly, efficient and knowledgeable manner; supporting visitors with special needs / impairments and providing a high level of service in accordance with the Equality Act.
• Answering visitors’ queries about the catering offer, deals, seating, and ingredients.
• Checking on how visitors are enjoying their experience of catering at Haddo House and enquiring whether all their needs are met.
• Consistently presenting high quality plating of food.
• Promoting the National Trust for Scotland and the benefits of membership of it.
• To maintain excellent standards of site and personal presentation at all times
• The general ongoing operational cleaning of all areas as necessary
• Wearing correct uniform, name badges, or PPE as required.

Purpose of role

This is an exciting and varied role in the Food & Beverage team at Culloden Visitor Centre. Based in our Café, you’ll prepare food for a high-quality, sit-in café and grab-and-go takeaway menu, helping to generate the income that enables our charity to care for this world-renowned historical site.

You will ensure that visitors from across the globe have an enjoyable experience here through excellent service standards and menu availability. You will be responsible for the daily operation of the kitchen, and achieving targets through efficient, safe food production practices.

Key Responsibilities
• Deliver a high-quality food offer for our high and low season, relevant to our Culloden customers (visitors, events and functions) and Visit Scotland’s Taste our Best principles.

• Contribute to menu development, making creative, practical and cost-effective choices for food production and presentation.

• Ensure high standards of kitchen hygiene, cleanliness and tidiness, keeping up-to-date compliance documentation (HACCP, COSHH checklists and temperature sheets).

• Work alongside the management team to ensure all food and non food items are ordered, and stock is controlled to the highest standard

• Ensure food production adheres to allergen guidelines, in particular Natasha’s Law, and support the implementation of upcoming laws, e.g. displaying nutritional value & calorie counts.

• Minimise wastage and identify potential savings to achieve targets for cost of sales, gross profit and environmental sustainability.
• Ensure the upkeep and safety of equipment and utensils used within the catering outlets.

• Share in the common responsibility of implementing the Trust’s “Health & Safety Policy”, being mindful at all times of the health and safety of self, staff, volunteers, and visitors.

JOB PURPOSE

To assist the Head Chef and Food & Beverage Manager in the day-to-day management of the food and beverage experience at Newhailes. Specifically, day to day supervision of the kitchen and to ensure that all targets are met, and all visitors receive the highest level of visitor experience standards.

KEY RESPONSIBILITIES AND ACCOUNTABILITIES

• Assist the Head chef with the development of the Menu Cycle/Specification
• Contribute to food production as per the Menu Cycle/Specification and event Food Production (corporate, hospitality, meetings etc.)
• Keeping up to date HACCP, COSHH checklists and temperature sheets.
• Ensure high Standards of Kitchen Hygiene, Cleanliness, Tidiness and related Schedules
• Use fresh Produce and Ingredients whenever and wherever is possible and minimise wastage.
• Maintain a high standard of Food Presentation to the Customer
• Share in the common responsibility of implementing the Trust’s “Health & Safety Policy”, being mindful at all times of the health and safety of self, staff, volunteers, and visitors.
• Share in the common responsibility of working in a manner mindful of the Trust’s obligations to minimise impact on the environment, through e.g. efficient use of water/heat/light, recycling and the disposal of waste, considered use of transport
• Help to reduce occurrences where Health or Safety of yourself and other employees may be put in jeopardy
• Adherence to the COSHH Training provided and control of substances covered by COSHH
• Involvement in the upkeep and maintenance of both the entire department site and, specifically, the Catering Outlets
• Involvement in assessing and preserving the safety of utensils and equipment used within the Catering Outlets

OVERVIEW OF THE POST

All Catering Assistants are responsible for the delivery of high quality food and service at Almond Valley Heritage Centre. Customers are expected to receive the same high quality of service whether in the Tearoom, at a Birthday Party, the Shepherd’s Hut or when using Soft Play.
Catering Assistants are expected to communicate well, respond quickly to instructions and work as part of a team.

You will form part of the Catering Team, lead by the Catering Manager. You will be responsible to the Senior Catering Assistant/Kitchen Leader according to work location.

SCOPE OF DUTIES
Key Responsibilities, Duties and Objectives

Kitchen
• Supporting the Kitchen leader in food preparation and service
• Carrying out basic food preparation tasks – peeling and chopping vegetables, baking
• Ensuring senior personnel are equipped with ingredients and equipment
• Tidying and rotation of stock, accepting deliveries, correct storage of food supplies and consumables
• Cleaning of kitchen work surfaces, equipment, floors, walls et
• Dish washing duties
• Understanding Health & Safety, HACCP, Environmental Health Legislation and Almond Valley procedures

Front of House
• Service of hot and cold drinks, bakery goods and grab-and-go items
• Taking orders for hot foods and relaying of these
• Operation of the tills
• Assisting with waiting and table service duties
• Maintaining tables, chairs and high chairs in a clean and tidy fashion i.e. clearing between customers
• Maintaining the servery counter and till points to the standard specified by senior staff
• Ensuring cleanliness of all service areas
• Ensuring adequate stocks of cutlery, napkins etc
• Stocking of refrigeration, display units to the specification indicated
• Understanding fire safety and emergency evacuation procedures
• Record feedback from visitors

We are looking for an enthusiastic individual to join our friendly and busy visitor services team at Bowhill House and Grounds, a premium visitor attraction, near Selkirk.

In this seasonal role, you will mostly work in our café serving delicious cakes, lunches and refreshments, and ensuring that the highest standards of hygiene are maintained. In addition, you will work from our Kiosk giving a warm welcome to visitors and dealing with queries. If you have excellent customer service skills and a can-do attitude, then we would love to hear from you!

JOB PURPOSE

You will be responsible for the operational delivery of the visitor experience in the food & beverage department at Leith Hall.

Delivering performance standards and targets to ensure enjoyment of the property by visitors and members is maximised and key commercial, financial and development objectives are achieved to make the property fully sustainable.

You will be part of a broader management team at Leith Hall responsible for delivering an overall visitor service strategy, promoting good communication across the site and a joined-up service provision. You will work with the food and beverage visitor services manager for Aberdeenshire South to create a cohesive standard across the region.

KEY RESPONSIBILITIES AND ACCOUNTABILITIES

Visitor experience
• Offer excellent customer service and ensure all members of the hospitality team do the same.
• Delivering high standards and a consistently warm welcome within the hospitality department
• Act as one of our duty manager team, responsible for ensuring a safe and smooth visitor operation, opening/closing and security of buildings, addressing issues and emergency procedure and providing relief cover, as required.

Food & Beverage operation
• Lead with menu development ensuring presentation of a high-quality food and drink offer.
• Ensure compliance with health and safety, food hygiene, food allergens, licensing, and environmental health standards, completing all related record-keeping.
• Accountable for cost-effective stock management, ordering, storage and wastage control.
• Assist with functions and events, from inventive add-ons to property wide events to catering functions.

People management
• Supervise the activities of a team of Visitor Service Assistants (VSAs), achieving excellent staff performance and motivation through effective induction, training, task-setting and coaching on front and back-of-house routines.
• Work closely with specialist advisory colleagues, i.e. Our Trust-wide Food & Beverage Development team
• Instill a Health & safety and Environmental health culture throughout the hospitality operation.

Finance Management
• Share responsibility for achieving the Food & Beverage budget together with the F & B Manager
• Share responsibility for achieving the overall commercial budget with the site Visitor Services Supervisor – Operations
• Monitor commercial performance and adjust activities to capitalize on sales opportunities and run a cost-effective Food & Beverage operation.
• Supervise daily till operations and perform end-of-day income reconciliation.
• Assist the F&B Manager with menu costing and stock-taking.
• You may have delegated tasks within other departments and you will understand and help deliver the overall property business plan.

We are looking for a professional and experienced cook to assist our Catering Supervisor in leading our catering team during the 2024 season.

As well as carrying out food preparation and baking, you will help with stock management, place orders, carry out supervisory tasks to support the catering team and ensure that high standards are maintained in our cabin and tearoom. You will assist with day to day customer facing operations such as serving and making coffee. If you have a passion for providing outstanding hospitality, then we want to hear from you!

Based mainly at Winton Castle, you will be a great team player with the highest standards of cleanliness and an eye for detail. Hours – 20 hours per week but we are happy to consider splitting this job between more than one candidate if less days/hours are more suitable. We can be flexible with days/hours of work; however, core hours will be mornings and some of these shifts will be at weekends during busy event times.

Our luxury holiday properties require a flexible and experienced housekeeper to lead a small housekeeping team for the properties between bookings. You will have the highest standards of cleanliness with an eye for detail and an understanding of high-end customer service. Hours – 20 per week typically be worked over 3 days with shifts between the hours of 7.30am-3:30pm depending on bookings. Some hours are flexible and this can be worked out with the Self Catering Coordinator. We try to avoid weekend shifts and give plenty of notice when these do happen.
