The Kitchen at Restoration Yard is a gorgeous restaurant in the stable yard area of Dalkeith Country Park, a beautiful 1,000-acre space owned by the Duke of Buccleuch. The team ensure that every guest receives a friendly welcome and the highest standard of service.

We are looking for F&B Assistants/Waiters to work in our fast-paced restaurant at weekends and during the busy Easter period. You will be responsible for a busy section of the restaurant, ensuring a professional and relaxed dining experience for our guests. You will be confident and able to work independently, with the ability to communicate effectively with the kitchen and management team.

We are looking for a Cook to join our Catering team. We welcome hundreds of people each week to our Centre and this role ensures that the variety, quality, and sustainability of food products provided through our Seabird Café contributes to the customer’s overall experience.

The Cook supports the preparation of the food on the menu for our daily service and occasional events.

Principal responsibilities
The main responsibilities of the Cook are:

i. Check the quality of ingredients and prepare these to use in cooking (chopping and peeling vegetables, cutting meat, preparing salads etc.).
ii. Learn and become familiar with the cooking process, equipment and appliances used to make each of our dishes.
iii. Ensure great presentation of our food, by dressing dishes before they are served.
iv. Cook dishes under the supervision of the Catering Manager or the Chef and develop sufficient competence to provide cover during staff absences/holiday cover.
v. Ensure that all dishes for a single order are ready for serving at the same time and co-ordinate effectively with the café serving team.
vi. Take responsibility for maintaining and cleaning the kitchen area/equipment ensuring that all appropriate standards are met.
vii. Ensure all food and other items are stored properly.
viii. Monitor stock levels and advise the Catering Manager or Chef of any orders that need to be placed.
ix. Ensure that all duties are undertaken in compliance with health and safety, food standards and hygiene regulations and practices, as well as our internal procedures.
x. Carry out any other reasonable duty which is within the competence of the post.

We are looking for a professional and experienced individual to assist our Catering Supervisor in overseeing our catering team during the 2023 season.

JOB PURPOSE

Do you have a passion for food and dedicated to high levels of customer service?

Visiting our Café is an essential part of the visitor experience for those coming to Pollok House and the role of the Visitor Service Assistant – Food & Beverage is to make it a positive and memorable part of a visitor’s day with us. Our café is a busy operation, and the ideal candidate should be experienced in a high volume, fast paced environment. Barista experience would be beneficial for this role however training will be given.
We also operate as a function venue so this role will be required to work evenings on occasion to assist with weddings or other events. Previous experience in a function venue dealing with large scale dinner service and bar service would be beneficial.

Core hours will be the minimum hours available, with the opportunity to work additional hours to suit the needs of the business. Must have full weekend availability, hours will be issued on a rota basis.

• To plan, prepare, cook, and present food to the standards required by the Trust for a facility with estimated income of £390k

About the Role

We are looking for a talented and motivated Junior Sous Chef to join our professional team at the award-winning Caledonian Canal Centre in Fort Augustus.

The successful candidate will have the ability to meet and achieve preparation and food delivery deadlines, especially within peak season, with a flexible attitude to working hours.  This is a permanent role.  In order to provide the service our customers require, both weekend and very occasional evening work is required on a rotational basis over 7 days.   Work life balance is a key benefit to this role.

In addition to the progressive salary, Scottish Canals also offers a generous annual leave entitlement of 28 days rising to 30 after 5 years plus public holidays, along with enhanced company sick pay, discounted shopping vouchers, and a contributory pension scheme with up to a 10% employer contribution.

About You

You will be a passionate and supportive team player who is both an effective leader and follower.  Ideally an experienced Sous Chef who’s had similar roles in a fresh food premises but this position could also be suitable for a very strong commis chef looking to progress with their career.

Key responsibilities of the role will include:

Daily running of the kitchen
Food preparation as required
Working alongside Sous Chef and the front of house team to ensure the smooth running of the Caledonian Canal Centre F&B offer
Ensuring health and safety records are kept up to date.
Managing food purchase and storage
Menu planning and managing COS in line with budgets
Maintaining a safe and hygienic kitchen environment.
Be aware of the food preparation level during busy and quiet times.

The ideal candidate will have the following key skills:

NVQ Level 2 or above in Catering
Previous experience working in a similar role
Good communication and team working
Highly organised with excellent planning
Able to work under pressure in a high-paced environment
A full driving licence
