JOB PURPOSE

You will be responsible for the operational delivery of the Food & Beverage experience at Crathes Castle, Drum Castle, Craigievar Castle and Leith Hall (Aberdeenshire South Cluster).

Delivering performance standards and targets to ensure enjoyment of the property by visitors and members is maximised and key commercial, financial and development objectives are achieved to make the property fully sustainable.

You will be part of a broader management team responsible for delivering an overall visitor service strategy, promoting good communication across the site and a joined up service provision.

KEY RESPONSIBILITIES AND ACCOUNTABILITIES
• Driving the Food & Beverage department to achieve its financial targets, maximising income and profitability, using the Trust’s procedures and instructions. You will strive to be efficient and ensure cost effectiveness in all the work you do.
• You will work closely with the sites Visitor Services teams and will be responsible for the visitor experience on a day-to-day basis when they are not present.
• Create a culture of ‘exceptional service, every time’. Delivering high standards of delivery and a consistently warm welcome on every occasion.
• You will ensure high standards of presentation across the properties; you may have delegated tasks within other departments and you will understand and help deliver your overall property business plan.
• Taking responsibility for opening and closing and security of buildings as well as emergency procedure implementation, duty management and providing relief cover as required
• Staff and volunteers – (recruitment, induction, development, motivation, performance management) such that they are fully equipped and motivated to undertake their duties to the required Trust standards and that staffing budgets are adhered to;

Key responsibilities of the role:

Catering operation
• Lead with menu development and the preparation, cooking and presentation of a high-quality food and drink offer.

Visitor experience

People management
• Supervise the activities of a team of permanent and seasonal Visitor Service Assistants (VSAs), achieving excellent staff performance and motivation through effective induction, training, task-setting and coaching on front and back-of-house routines.
• Prepare catering rotas and holiday allocation to meet business needs.
• Work closely with specialist advisory colleagues, i.e. their Trust-wide Catering Development team.

Finance Management
• Share responsibility for achieving an F&B budget of around £350,000 a year.
• Monitor commercial performance and adjust activities to capitalize on sales opportunities and run a cost-effective catering operation.
• Supervise daily café till operations and perform end-of-day income reconciliation as a duty manager.
• Assist the F&B Manager with menu costing and stock-taking.

Key skills and experience required:

Hands on’ working in a busy catering and sales environment, ideally in a visitor attraction setting or café.
Excellent leadership and influencing skills, supervising and supporting staff on a daily basis

The Visitor Services Manager – Food & Beverage will report to the Operations Manager at Culloden Battlefield.

KEY RESPONSIBILITIES

• Staff and volunteers – (recruitment, induction, development, motivation, performance management) such that they are fully equipped and motivated to undertake their duties to the required Trust standards and that staffing budgets are adhered to.

Department specific – catering

• To ensure the planning, preparation, cooking, and presentation of food to the standards required by the Trust for a facility with estimated annual income target in excess of £611K with budgeted expenditure of £434K – total transactional budget responsibility of £1,045m.
• To ensure that the location meets statutory and company requirements of Health and Safety, Food Safety and Environmental legislations and procedures including Waste Disposal and Allergens.
• To conduct Food Safety and Health and Safety Risk Assessments and ensure that all standards and procedures with regards to Hygiene and Safety are established and maintained in line with the Food Safety Management Plan.
• Accountable for stock levels and making key decisions about stock control.
• Responsible for analysing sales figures and forecasting future sales.
• Adhering to the sale of alcohol legislation, being a Premises Manager.

Purpose of the role

To assist in the day-to-day management of the Food & Beverage offer at Robert Burns Birthplace Museum, to ensure that all targets are met, and all visitors receive the highest level of visitor experience standards.

Key Responsibilities
• Assist with the development of the Menu Cycle/Specification
• Contribute to food production as per the Menu Cycle/Specification and event Food Production (corporate, hospitality, meetings etc.)
• Keeping up to date HACCP, COSHH checklists and temperature sheets as well as allergen measures/controls
• Ensure high Standards of Kitchen hygiene, cleanliness, tidiness, and related schedules
• Use fresh produce and ingredients whenever and wherever is possible and minimise wastage.
• Maintain a high standard of food presentation to the customer
• Share in the common responsibility of implementing the Trust’s “Health & Safety Policy”, being mindful at all times of the health and safety of self, staff, volunteers, and visitors.
• Share in the common responsibility of working in a manner mindful of the Trust’s obligations to minimise impact on the environment, through e.g., efficient use of water/heat/light, recycling and the disposal of waste, considered use of transport
• Help to reduce occurrences where Health or Safety of yourself and other employees may be put in jeopardy
• Adherence to the COSHH Training provided and control of substances covered by COSHH
• Involvement in the upkeep and maintenance of both the entire department site and, specifically, the Catering Outlets
• Involvement in assessing and preserving the safety of utensils and equipment used within the Catering Outlets.

Dimensions and Scope of Job

• The role is based in the main museum building and at Robert Burns Birthplace cottage.
• The role works with several departments: retail, catering, and admissions, assisting with special events and functions when required.
• There may be times when you are required to work at other NTS properties such as but not exclusively Souter Johnnies Cottage and the Batchelor’s Club
• The role requires the post holder to work flexible working patterns and hours including evenings, weekends, and public holidays.

People Management

• The Post Holder does not have direct line management responsibilities but would be expected to deputise in the absence of the Head Cook and direct kitchen and front of house staff.
• Will work closely with other property colleagues and will have regular interaction with other technical/specialist advisory colleagues based in other locations and departments
• Will have regular (daily) interaction with suppliers and members of the public of all ages and abilities

JOB PURPOSE
Brodick Castle is an idyllic island destination and visitor attraction on the Isle of Arran. As one of the Visitor Services team within the castle, you’ll ensure that all visitors receive an excellent visitor experience and leave feeling inspired by this stunning property and its history.
Specifically, to ensure the smooth and safe operations in Catering in one of the two facilities on the site, delivering excellent customer service along with preparing and serving hot and cold food and drinks and helping to make the property the best possible place to visit and work.
Core hours will be the minimum hours available, with the opportunity to work additional hours to suit the needs of the business. Must have full weekend availability, hours will be issued on a rota basis.

KEY RESPONSIBILITIES AND ACCOUNTABILITIES
To provide a consistently high standard of visitor care at all times
• Welcoming visitors to the site and processing their catering purchases in a friendly, efficient and knowledgeable manner.

• To actively feedback visitor comments to line managers to develop and improve offer, service, operations.
• To work flexibly across departments and sites as needed.

Health and Safety
• To ensure site meets with Health and Safety legislation in liaison with your department manager.
• To ensure that visitors vacate the site at close of business and that the site is secured at end of day.

JOB PURPOSE

You will be responsible for the operational delivery of the Food & Beverage experience at Crathes Castle, Drum Castle, Craigievar Castle and Leith Hall (Aberdeenshire South Cluster).

Delivering performance standards and targets to ensure enjoyment of the property by visitors and members is maximised and key commercial, financial and development objectives are achieved to make the property fully sustainable.

You will be part of a broader management team responsible for delivering an overall visitor service strategy, promoting good communication across the site and a joined up service provision.

KEY RESPONSIBILITIES AND ACCOUNTABILITIES
• Driving the Food & Beverage department to achieve its financial targets, maximising income and profitability, using the Trust’s procedures and instructions. You will strive to be efficient and ensure cost effectiveness in all the work you do.
• You will work closely with the sites Visitor Services teams and will be responsible for the visitor experience on a day-to-day basis when they are not present.
• Create a culture of ‘exceptional service, every time’. Delivering high standards of delivery and a consistently warm welcome on every occasion.
• You will ensure high standards of presentation across the properties; you may have delegated tasks within other departments and you will understand and help deliver your overall property business plan.
• Taking responsibility for opening and closing and security of buildings as well as emergency procedure implementation, duty management and providing relief cover as required
• Staff and volunteers – (recruitment, induction, development, motivation, performance management) such that they are fully equipped and motivated to undertake their duties to the required Trust standards and that staffing budgets are adhered to;
• Instil a Health & Safety culture across the property, ensuring the team work within the property’s ‘Safe System of Work’ to reduce risk of incidents and accidents to volunteers, employees and visitors.
• Budgets – (setting, phasing, monitoring, reporting, pro-active and re-active adjustments together with the Operations Manager) to ensure that the finances are sustainable within the context of the wider property budgets;

Department specific – visitor services
• Managing visitor-related Food & Beverage areas, along with supporting wide team on site.
• Ensuring that the longevity of the Trust’s buildings and fittings are maximised through appropriate maintenance and/or replacement regimes;
• To ensure that the property meets statutory and company requirements of Health and Safety, Food Safety and Environmental legislations and procedures including Waste Disposal and Allergens
• Adhering to the sale of alcohol legislation, being a Premises Manager.

REQUIRED QUALIFICATIONS, SKILLS, EXPERIENCE & KNOWLEDGE
Qualifications
• NVQ3/BTEC/City & Guilds/HND/Degree or equivalent experience;
• Ability to work ‘hands-on’ – including in the kitchen – alongside the team members, demonstrating the customer service skills required of all staff.
• Experience in a Food & Beverage or Hospitality environment
• Hold a valid and recognised SQA Licensing Qualification e.g. Scottish Personal License Holder’s Certificate and Personal License or willingness to train for such;
• Intermediate Food Hygiene Certificate or above;
• Current driving licence

The role will be based at Crathes Castle, which stands against a backdrop of rolling hills and set within its own glorious gardens. Café 1702 at Crathes is the perfect hangout for all the family, serving a selection of delicious freshly prepared hot and cold food, including an unrivalled selection of home-baked treats and ice cream with both indoor and outdoor seating.

At Drum Castle Mary’s Larder – named after the resourceful and plucky sister of the 17th laird they offer a variety of a selection of coffees, teas and hot chocolates, their famous scones, made fresh every da, and Craigievar Castle the beautiful pink castle said to be the inspiration for Walt Disney’s Cinderella Castle offers a tea room.

Key skills and experience required:

• Direct experience of managing multi-strand visitor/commercial services in a hospitality, heritage or tourist-attraction context;
• Catering skills and knowledge
• Excellent leadership and influencing skills;
• Excellent understanding of report writing and financial management;
• Well developed time management and organisation skills.
• A full, clean driving license for driving the UK essential.

This role offers an excellent competitive salary within a range of £33,702 to £37,281 per annum with significant company benefits.
