Part-Time/Fixed Term – This role is fixed term to 31/10/2023 and the working hours are 30 hours per week.

The role

To coordinate the day-to-day catering operations to deliver first-class visitor experience and that your team and visitors enjoy a safe and happy environment; whilst generating income to exceed agreed targets in support of RZSS vision and mission.

Some of the things you’ll do:

Working with direction from the Catering Coordinators, provide day-to-day supervision of the Catering team.
Develop and maintain a supportive and dynamic first-class sales and service culture amongst the team -focusing on delivering high standards of service and food presentation in accordance with Cook safe regulations.

Ensure the Café areas are presented to the highest standards (displays, seating areas, signage), fully stocked and equipment is cleaned, maintained and serviced on a regular basis and report to the Coordinator any maintenance issues.

Support Visitor Experience Assistants with visitor complaints and act a route of escalation to deal with refunds in a professional manner and referring customer to your line manager if complaint cannot be resolved.

Working alongside the back of house team to ensure the smooth running of the cafe and outdoor catering areas as one united team.
What we’re looking for:

Starting pro-rated salary of £18,094 per annum (based on 30 hours per week)
Good achievement at Higher grade level (including English & Mathematics) or equivalent qualifications or experience.
Trained/certificate in Cooksafe and has ability/qualification to train others
Good understanding and use of electronic cash systems.
Significant experience of leading a team in a customer service environment

You will manage and develop the Castle Café, Playful Garden Café, two catering vans, at the beautiful Brodie Castle. You will also manage a growing weddings and functions offer. You will lead the catering team with menu design, food production, ordering, compliance and commercial performance, delivering a friendly, efficient service environment in line with the National Trust for Scotland’s policies, priorities, standards and targets. KEY RESPONSIBILITIES AND ACCOUNTABILITIES

Catering operation
• Lead menu development, preparation, cooking and presentation of a distinctive, high-quality, locally-sourced food and drink offering at two busy café outlets, plus complementary events and functions.
• Create a strong health & safety culture, ensuring compliance with food hygiene and environmental health standards, monitoring and record-keeping.
• Accountable for cost-effective stock sourcing, ordering, management and wastage control.
• Understand and adhere to the sale of alcohol legislation as a Premises Manager.
Visitor experience
• Develop innovative new food and drink products and projects to enhance visitor enjoyment, bring alive our stories and drive visitor numbers.
• Create a culture of exceptional service, every time, leading by example with the warm welcome you give.
• Regularly monitor customer feedback, mystery visitor and VisitScotland audits and develop suitable action plans based on their results.
• Provide inspirational content for social media and media promotion.
• Work with the Duty manager and other managers on a daily basis to ensure the safe and smooth visitor operations, taking an interest in the effective running of all aspects of the visitor experience.
People management
• Recruit, induct, develop and performance manage your team to ensure they are fully equipped and motivated to undertake their front and back-of-house duties.
• Ensure staffing numbers, catering rotas and holiday allocation meets business needs and budgets.
• Enable the team to operate within our ‘Safe System of Work’ to minimise the risk of incidents or accidents and ensure preparedness for emergencies.
• Work closely with property colleagues and specialist advisory staff like our regional Catering Development Manager to ensure our catering offer is closely aligned with wider strategic plans.
Finance performance
• Work closely with the Operations Manager to set, phase, monitor and report on budgets to deliver ambitious, sustainable commercial performance and cost control.
• Encourage a culture of up-selling and personal recommendations among staff to grow spend per visitor.
• Supervise safe and secure café till operations, perform end-of-day income reconciliation as a duty manager and conduct end of month and year financial procedures.
• Ensure the longevity of our equipment, buildings and fittings through appropriate maintenance and/or replacement regimes.

REQUIRED QUALIFICATIONS, SKILLS, EXPERIENCE & KNOWLEDGE

Job description
Our café has one of the best views in the town! Because of this, we welcome hundreds
of people a week to our café and you’ll have a vitally important role to play. You’ll help
the catering team to deliver high quality service and you’ll work hard to ensure that our
visitors have a fantastic experience.
You will provide a warm welcome and must have a helpful attitude. You’ll quickly
develop an understanding of all our products and ingredients and be able to promote
the café’s special offers. Alongside other team members, staff keep the café clean, up to
our five-star standard, as well as serving customers quickly, efficiently and promoting

Principal duties
• To serve food efficiently from our kitchen, always ensuring friendly customer

We’re looking for enthusiastic people to join our teams at the Pinewood Grill and Forester’s Cafe. Successful applicants will have good customer care skills, be organised, and able to work as part of a busy team. Experience isn’t essential as full training will be given.
