Scottish Canals are looking to appoint a keen and motivated Seasonal Chef to work alongside a dedicated team in our destination, The Caledonian Canal Centre in our Spring to Autumn 2022 season.

The successful candidate will have the ability to meet and achieve preparation and food delivery deadlines, especially within peak season, with a flexible attitude to working hours.

A key area of the role will also be to maintain standards and due diligence as well as having a good understanding of food and beverage trends to ensure we exceed expectations and continually move the business forward, commercially and operationally.

Kitchen experience would be essential with all Hygiene and Health and Safety certificates up to date and relevant.

This role attracts a living wage salary plus a 10% variable rota allowance, which is pro-rated to the length of the contract. 

You will work on a rota which includes weekends and bank holidays.

The role

To prepare, cook or bake (role depending) all food for RZSS Highland Wildlife Park food outlets that deliver
the highest standards of produce which not only exceeds our visitor expectations in flavour, substance and
presentation, but is also in support of RZSS vision and mission.

This is a permanent position where the working hours are 37.5 hours per week and weekend working will be required.

Some of the things you’ll do:

* Working with direction from the Catering Coordinator, prepare all raw food in line with hygiene legislation, minimising all food wastage through effective production. This can involve either cooking the day’s menu options or baking.
* Ensure all food presented is of the highest quality, making sure of dietary requirements.
* Assist with the set-up of the kitchen on a day to day basis.
* Contribute to an effective ordering and stock control procedures by having an accurate knowledge of stock and informing Catering Coordinator when stocks are low.
* Take responsibility for delivery and return processes, reconciliation, discrepancies and ensuring all stock is safely stored and easily accessible in line with Health & Safety guidelines.
* Actively be involved in improving storage and stock and stock control systems, suggesting improvements in the overall layout and organisation.
* Contribute to menu development and the analysis of food quantity and quality.

What we’re looking for:

* You’ll be qualified to SVQ Level 2 or equivalent qualification or relevant experience preferable
* Have a good understanding of legislative requirements regarding food preparation and delivery.
* Can demonstrate high level of catering competence.

The role

To coordinate the day-to-day catering operations to deliver first-class visitor experience and that your team and visitors enjoy a safe and happy environment; whilst generating income to exceed agreed targets in support of RZSS vision and mission.

This role is a permanent role where the working hours are 30 hours per week and weekend working will be required. Starting salary of £17,398 (this is the pro-rated salary)

Some of the things you’ll do:

Working with direction from the Catering Coordinators, provide day-to-day supervision of the Catering team.
Develop and maintain a supportive and dynamic first-class sales and service culture amongst the team -focusing on delivering high standards of service and food presentation in accordance with Cook safe regulations.

Ensure the Café areas are presented to the highest standards (displays, seating areas, signage), fully stocked and equipment is cleaned, maintained and serviced on a regular basis and report to the Coordinator any maintenance issues.

Support Visitor Experience Assistants with visitor complaints and act a route of escalation to deal with refunds in a professional manner and referring customer to your line manager if complaint cannot be resolved.

Working alongside the back of house team to ensure the smooth running of the cafe and outdoor catering areas as one united team.
What we’re looking for:

Good achievement at Higher grade level (including English & Mathematics) or equivalent qualifications or experience.
Trained/certificate in Cooksafe and has ability/qualification to train others
Good understanding and use of electronic cash systems.
Significant experience of leading a team in a customer service environment

JOB PURPOSE
We are looking for an enthusiastic, motivated and experienced individual to join our food and beverage team at Holmwood House.

Holmwood House has a small tearoom offer that is a vital part of our visitor experience. KEY RESPONSIBILITIES AND ACCOUNTABILITIES

• Welcoming visitors to the site and processing their catering purchase in a friendly, efficient and knowledgeable manner;
• Providing information about the site, its history, contents, offers and merchandise;
• Promoting National Trust for Scotland brand to include our Membership scheme, events, upselling other properties and any promotional campaigns, being proactive in the selling of Membership and Gift Aid.

JOB PURPOSE

To assist the Food & Beverage Manager in the day-to-day management of the food and beverage experience at Brodie Castle, Playful Garden and mobile catering units. Specifically, day to day supervision of the kitchen and to ensure that all targets are met, and all visitors receive the highest level of visitor experience standards.

We are looking for a Cook to join our Catering team. We welcome hundreds of people each week to our Centre and this role ensures that the variety, quality, and sustainability of food products provided through our Seabird Café contributes to the customer’s overall experience.

The Cook supports the preparation of the food on the menu for our daily service and occasional events.

Principal responsibilities

The main responsibilities of the Cook are:

i. Check the quality of ingredients and prepare these to use in cooking (chopping and peeling vegetables, cutting meat, preparing salads etc.).
ii. Learn and become familiar with the cooking process, equipment and appliances used to make each of our dishes.
iii. Ensure great presentation of our food, by dressing dishes before they are served.
iv. Cook dishes under the supervision of the Catering Manager or the Chef and develop sufficient competence to provide cover during staff absences/holiday cover.
v. Ensure that all dishes for a single order are ready for serving at the same time and co-ordinate effectively with the café serving team.
vi. Take responsibility for maintaining and cleaning the kitchen area/equipment ensuring that all appropriate standards are met.
vii. Ensure all food and other items are stored properly.
viii. Monitor stock levels and advise the Catering Manager or Chef of any orders that need to be placed.
ix. Ensure that all duties are undertaken in compliance with health and safety, food standards and hygiene regulations and practices, as well as our internal procedures.
x. Carry out any other reasonable duty which is within the competence of the post.

Essential skills and experience
• Organised with an ability to work effectively in what can be a fast-paced, high-volume business at peak times.
• A team player – adaptable and flexible.
• A confident communicator.
• An appropriate means of transport to get to the Centre (between 0830 and 1800).

Desirable skills and experience
• A willingness to learn on the job and/or to work towards an SQV cooking certificate.
• Alignment with our charity’s conservation and education goals.
• An awareness of and affinity to environmental sustainability principles.

We are looking for an enthusiastic person to join the Front of House team at the Forester’s Restaurant. The successful applicant will have good communications skills and be able to work as part of a team. Customer service experience would be preferable but isn’t essential as full training will be provided. This is a full-time, year-round position.

Main purpose of job:

To oversee the delivery of the daily catering provision within Scone Palace maintaining exceptionally high standards of both food quality and service. Baking, cooking and production of preserves, ensuring all legislative requirements are fulfilled. Catering provision comprises: Coffee Shop (seats 70); Old Kitchen (seats 50); group catering, including conferences, functions, events and sporting lunches plus ad-hoc catering requests for overnight guests.

Candidates must have a very good understanding of, and desire to promote, food provenance and seasonality.
